I’m not sure if I would exactly call this a crumble, but I discovered some almost berry old (hehe) strawberries in the fridge and, being my frugal self, decided something must be done!
So, I found a basic crumble recipe and made that batter. Then I remembered I had cream cheese and thought…oh my. This could be yummy! So friends, here is what I came up with. Note: I had to fight for a piece and luckily I’m a warrior and succeeded!!
3 cups diced strawberries (fresh or overripe)
3/4 cup sugar
1/2 cup sugar
2 tbs sugar
1 cup all purpose flour
2 tsp baking powder
½ teaspoon salt
1 cup milk
½ teaspoon vanilla extract
1 stick salted butter, melted
15 1 inch cubes cold cream cheese
1.) Add 3/4 cup sugar to diced strawberries and mix well. Set aside.
2.) In a medium mixing bowl, combine flour, baking powder, salt and 1/2 cup sugar well with a whisk.
3.) Stir in 1 cup milk, vanilla, and melted butter until combined.
4.) Grease an 8 or 9 inch loaf pan and add batter.
5.) Place 2 tbs sugar in small dish.
6.) Roll cream cheese cubes into sugar until well coated, place on top of batter, and push down gently. (Don’t submerge cubes into mixture.)
7.) Pour strawberries over the top evenly.
8.) Bake at 375 for 40 minutes or until golden brown on edges and toothpick inserted in center comes out clean.
